Waffle Cookies – The Perfect Cross Between a Cookie and a Waffle

Some days you crave cookies, other days you crave waffles — and on most days, you just want both! That’s how these Waffle Cookies came to life in my kitchen. The first time I made them with my 1:2:3 sugar-butter-flour ratio, I knew I’d hit gold.
They’re crisp on the outside, buttery soft inside, and take less than 15 minutes from start to finish. Perfect for tea-time, late-night munchies, or just when you’re bored and want to bake something fun.

(P.S. I’ve used two different waffle irons for this — and the textures turned out completely different! Scroll below for that little experiment.)

🧈 Ingredients

  • 50 g sugar

  • 100 g butter (softened)

  • 150 g flour (maida)

Optional Mix-ins (for oven version):

  • Chocolate chips

  • Cocoa powder

  • Tutty fruity

  • Chopped nuts

👩🍳 Instructions

  1. Cream the butter – Whip up the butter until it changes color and becomes pale and fluffy.

  2. Add sugar – Mix in sugar and beat again. The mixture will turn lighter and creamier.

  3. Fold in flour – Add flour and bring it together into a soft dough.

  4. Preheat your waffle iron – You can use a large or mini waffle maker.

    • Large Waffle Iron (like Lifelong): Bakes at a higher temperature in 2–3 minutes, resulting in a lighter texture.

    • Mini Waffle Iron: Takes about 6 minutes, giving a crunchier, crispier cookie.

  5. Bake – Scoop small portions (50–60g each) and place in the waffle iron. Cook until golden brown.

  6. Cool – Let the cookies rest for a minute before removing them carefully.

🍪 Oven Version

You can also bake these cookies in an oven!

  1. Roll out the dough between two parchment papers (refrigerate for 15–20 minutes if it’s too soft).

  2. Cut into desired shapes or make small balls.

  3. Bake at 170°C for 12–13 minutes, until the edges turn golden brown.

💡 Quick Tips & Storage

  • ❄️ Freezing: The dough can be frozen for up to 6 months, though I personally prefer making it fresh — thawing takes longer than mixing!

  • 🍫 Mix-ins: For the oven version, feel free to add cocoa powder, chocolate chips, or nuts.

  • ⚠️ For waffle makers: Avoid chocolate chips or sticky add-ins as they can burn or stick to the plates.

  • 🧇 Texture tip: Bigger waffle iron = softer cookies. Smaller one = extra crisp!
